Carte Blanche

This unusual blend of Sauvignon, Chardonnay, and Viognier is a versatile wine, offering enough upfront floral and fruity appeal to be perfectly enjoyable as an apperitif, as well as enough body, complexity, and length to be equally suitable for the dinner table. But its hidden secret awaiting its most patient consumers will be its magical travel through time. Properly stored, it will gradually go through multiple phases of evolution over time. At this ealy stage, the precocious Viognier component plays a key role in its early flowery/spicy appeal. Later, the Sauvignon Blanc will take it through an honeyed/grapefruity stage and, still later on, the slow aging Chardonnay component will gradually take over with its nutty, creamy notes.

Tasting Notes

Tasting Date:   6/5/2005 – At our Spring Open House tasting: Tasted side by side with its younger sibling, the 04, this wine shows signs of maturity: less frivolous intensity and exotic superficiality, more elegance, subtlety, and complexity. Beautifully balanced and graceful, this is now showing a more profound side of it than you would suspect earlier.

Tasting Date:   5/25/2004 – Now starting to show some bottle age. Added to the bright flowery/herbal notes are deeper, lusher tones. Perhaps more grapefruit and hints of nuts to come...

Tasting Date:   7/1/2003 – Citrus blossom, aromatic herbs, hints of tropical fruits. Concentrated, with an elegant, stylish structure, lively acidity, and a long, minerally finish. Immediately irresistable, this wine should age for 5-10 years if stored properly.
